Each processing facility has an allergen control policy. The facility is required to follow two steps. The product with an allergen present should be processed last in the production sequence for the day which ensures that no cross contamination will take place. If a product with an allergen has to be processed in the middle of the day, that equipment has to be broken down and thoroughly cleaned to avoid any type of cross contaminants. Every evening the entire processing plant is sanitized thoroughly top to bottom so all equipment is thoroughly cleaned before the start of the plant and with the approval of USDA. ~Eliza
